For this Quince, 3 Fonteinen used Limburg, hand-picked quinces and had them macerated for almost three months on lambic from three different barrels and eight different brews. Most of the lambics used were over two years old, bringing the weighted average age at bottling to almost 27 months. The final fruit intensity is 800 grams of quinces per liter of finished quince.
