For this grape, 3 Fonteinen Spätburgunder (the German Pinot Noir) from Weingut Harth + Harth macerated. Freshly picked in Rheinhessen. Maceration lasted almost four months. Only two- and three-year-old lambics were used, which brings the weighted average maceration at bottling to almost 21 months. The final fruit intensity is 500 grams of grapes per liter of finished grape.
