For this Grape, 3 Fonteinen macerated Riesling grapes from Harth & Harth, Rheinhessen, Germany. The maceration lasted five months and they only used two and three year old lambics. Then blend with lambics aged three years and very young lambics for balance and refermentation in the bottle. In total, lambics from four different barrels and ten different brews were used. The weighted average age of the blend is almost 22 months. The final fruit intensity is 500 grams of Riesling grapes per liter of finished Grape.
