After a year of fermentation, this lambic is tapped from the regular Oud Beersel barrels and transferred to the small whiskey barrels of 225 l. These barrels, originally used to age port wine, were used in a whiskey distillery before the lambic was put on these barrels. For more than a year, the lambic continues to mature in the small barrels as it absorbs the flavor of the whiskey that has penetrated the wood. Beautiful barrel aromas and a secondary fermentation in the bottle have given this beer a great characteristic that we are quite proud of!
