 Old Beersel Green Walnut   is a surprising and innovative lambic beer from Oud Beersel.  As for the Oude Kriek Oud Beersel, only real fruit is used for the production of the Green Walnut. In July, the still green walnuts are picked in the Oud Beersel orchard and added to lambic that has matured in wooden wine barrels. The green walnuts draw on the lambic, making them  impart taste and aroma. The initial bitterness extracted from the nuts softens during the maturation of the nut lambic. 
 
 This creates a delicate balance between the slightly sourness of the lambic and the bitterness of the green walnuts. The wooden wine barrels give off a subtle touch of red fruit  to the beer. After refermentation in the bottle, this sparkling nut lambic from Oud Beersel is called 'Green Walnut', which is a good accompaniment to blue cheeses, dried hams  and salads with nuts.
