Word from the brewer: Our fruit bomb, the Coulis Speciale. Five types of small fruit, all home-grown and completely organic. Cherries, red and green gooseberries, blackberries and red currants come together in harmony in this intense fruit cocktail based on lambic of at least 1 year old. All the fruit is fermented in its entirety together with the lambic in barrels for four months. After bottling, a refermentation follows in the bottle to arrive at a solid 300 grams of fruit per liter of beer. The different types of fruit each bring their own character to arrive at this unique Coulis. Not suitable as a replacement for your daily portion of fruit, but it comes close.
