Word from the brewer: In the past, most lambic brewers were also farmers. That has its advantages. We grow many of our ingredients ourselves, and we sometimes have surpluses that ultimately did not reach a customer. What do you do then, if you have two pallets of blueberries that you can no longer sell? The brewers in us then think: "Would that go well with Lambic"? What turns out after four months in barrel: it certainly does! Our Blauwe Bes has all the goodness of Lambic, and a fruity, earthy taste of the blueberries. Admittedly, it is a special and a trial. But if you like it too, we will definitely make more of it. We mixed 125 grams of blueberries with one-year-old lambic, let it mature in barrel for four months, which then ferments further in the bottle after bottling.
