 3 Fonteinen Grape Grüner Veltliner, bottling date: 31/01/2023. For this very first fully organic grape lambic, we macerated Grüner Veltliner grapes on one- and two-year-old lambic. The grapes come from Christoph Hoch, a Demeter-certified winemaker from Hollenburg an der Donau, Austria. The total maceration time was almost five months and the weighted average age of this blend was over 19 months at bottling. The final fruit intensity is 406 grams of whole grapes per liter of finished grape. All the grains we used to brew the seven different lambics came from local Pajot farmers
