Authentic yet contemporary, GRIOTTEKE ! After being abandoned for decades because of its rarity and the laborious manual harvest, the Schaarbeekse kriek is finally being re-appreciated by traditional lambic breweries such as the Timmermans brewery. And this for its vibrant red juice and its sour-sweet taste. Six months! That's how long we let the Schaerbeek cherries macerate in one of our young lambic casks, before mixing the cherry lambic with lambic that itself has matured for 6 months, but in Pinot Noir and Bourgogne casks. The final touch: the refermentation in the bottle that starts as soon as the cork is on the majestic black bottle.
