Ensemble De Dochter van de Korenaar is a full-malt barley wine of 13% vol., which is brewed once a year; fermented with beer and wine yeast
 
“Pure Oak Series” matured in virgin oak barrels; or barrels that have never been used, so new. The barrels can be used a maximum of 3 times and new oak barrels are simply expensive. These types of beers were at most used as cut beer to give it a little more oak character 
of barrel-aged beers. For two years now, De Dochter van de Korenaar has been experimenting with maturation in new oak barrels. The resulting beers are one of a kind. The robust tannin-rich oak flavor and the round vanilla notes given off by the wood create uncut diamonds that often only come into their own after several months of refermentation in the bottle.
