De VAT 93 is a more sour Oude Geuze. You recognize the sourness slightly faster in the nose. When you taste it, you notice a friendly sourness. In addition to these volatile acids, you notice a mild fruitiness and a very small touch of wood and vanilla. Although the acidity is paramount, this Oude Geuze is still very nicely balanced and full of taste. Extra maturation of this bottle will lower the acidity. Foeder no 93 is originally a red wine barrel that has now been fully integrated into the Boon brewery's barrel park after more than 10 years. The lambic from this barrel now always has all the typical lambic aromas while almost nothing meer remains of the wines that have been in it. We only notice the volatile acids.

Where Oude Geuze Boon originates from lambic beers from different oak barrels, the VAT Monoblend is for the most part created with old lambic from the same barrel. This results in a taste experience that is as unique as the barrel itself.
Each Monoblend is identified by the combination of the word 'VAT' and a number. This code is very easy to explain: it always refers to the number of a large oak barrel - or a foeder - at Brouwerij Boon. The Monoblend consists of 90% old lambic from that specific cask. For example, the Monoblend 'VAT91' was made with old lambic from the 91st foeder of Brouwerij Boon.
By using old lambic from the same barrel, the character of that specific barrel is beautifully expressed in every Monoblend. In order to give the Monoblend its sparkle, suppleness and complexity, a small amount of young lambic is also added to the old lambic. While Oude Geuze Boon VAT44 was the very first Monoblend of Brouwerij Boon, several VAT editions have already been made.
