De VAT 122 is a super tender Oude Geuze. It is delicate, has a tender vinous (wine-like) touch. You notice soft tones of oak and frangipane in the background. Foeder no 122 is a recent foeder in brewery Boon collectie. It is one of the largest barrels, with a capacity of about 25,000 liters. The barrel was originally used for the storage and maturation of red wine, but has since been filled with lambic 3 times. The 3rd filling of lambic with which we made this VAT 122 is the first from the barrel in which typical wild yeasts of our brewery are really expressed.

Where Oude Geuze Boon is made from lambic beers from different oak barrels, the VAT Monoblend is for the most part created with old lambic from the same barrel. This results in a taste experience that is as unique as the barrel itself.
Each Monoblend is identified by the combination of the word 'VAT' and a number. This code is very easy to explain: it always refers to the number of a large oak barrel - or a foeder - at Brouwerij Boon. The Monoblend consists of 90% old lambic from that specific cask. For example, the Monoblend 'VAT91' was made with old lambic from the 91st foeder of Brouwerij Boon.
By using old lambic from the same barrel, the character of that specific barrel is beautifully expressed in every Monoblend. In order to give the Monoblend its sparkle, suppleness and complexity, a small amount of young lambic is also added to the old lambic. While Oude Geuze Boon VAT44 was the very first Monoblend of Brouwerij Boon, several VAT editions have already been made.
