For four and a half years, the lambic matured on cask N ° 31 that was used for this Oude Geuze Boon VAT 31. Foeder N ° 31, a large oak barrel, was built between 1905 and 1908 by the Bodenheim company from Kassel (Germany). He came in one in 1919

Brussels Lambic Brewery rightly so as part of a large batch of material sent to Belgium as compensation for “war damage 14-18”. The cask served in this old lambic brewery until 1988 and was then sold to our brewery together with about 20 casks. These casks were used in the first years for the ripening of lambic for 1 year for Oude Geuze Boon. The casks that supplied the finest Lambic were eventually reserved from 1992 for the production of Geuze Mariage Parfait, including N ° 31. In 2008 the cask was due for a major overhaul and cracks were found on the underside. In our coopers workshop, the cask was partially dismantled in 2009 and 12 staves (the wooden beams that make up the cask) were replaced by new ones. After the revision, we combined 2 worlds: the extra aromas added by the new oak and the now 100-year-old microflora in the wall of the barrel gave us a particularly fine Lambic every time after 3 years of maturation. On 30/11/2015, Lambic from our new brewing hall was first filled into this cask. The result was special. We therefore decided to reserve this lambic for a special production. Never before have we allowed Lambiek to become older than 3 years for a “VAT” production in the cask. We decided to let N ° 31 continue and bottled the lambic after 4 and a half years of maturation. VAT 31 became a delicate, soft and fine Oude Geuze. It has a fine sparkle and a pleasant cognac-like nose. The velvety soft yet firm aroma with notes of apricot and nuts is underpinned by a clear oak character. Brewed Nov. 2015, bottled on May 14, 2020.
