 3 Fonteinen Golden Doesjel S19/20 Oude Geuze is an assembly of 1 to (at least 25%) 4 year old lambic. Spontaneously fermented but unfortunately no longer in the bottle. Aged in oak barrels, long storage in the bottle.
 
 "The one that knows it all, still has to be born" as Armand would say. From time to time, we still get surprised by some of the results after blending lambic. Like this Golden Dusjel. While it was intended to be a Golden Blend, and despite the use of very pontent young lambikken, the fermentation in the bottle did not continue. And it remained flat. This blend was made with lambic from three barrels, orginating from three brews from three different brewers (of which 50% 3 Fonteinen brewed lambic). A nice gentle sipper!
