3 Fonteinen Doesjel was bottled on December 1, 2020 and was intended as Oude Geuze.
Due to the high proportion of older lambics, fermentation did not continue in the bottle and the blended lambic beer remained flat.  In return, with a natural white wine-like aroma and malty citrus flavour, the resulting beer has a subtle lambic blend, with a weighted average age of approximately 30 months after release. The oldest lambics were brewed at the beginning of 2018.
 
3 Fonteinen Doesjel is an assembly of lambics of one, two and at least three years old. Spontaneously fermented but no longer in the bottle. Matured in oak barrels. Long storage in bottle. Unfiltered. unpasteurized.
