This iteration of Zenne y Frontera is a blend of an Oloroso cask-matured lambic and a younger lambic, with the aim of initiating a continued fermentation in the bottle and further conditioning it into a gueuze. 3 Fonteinen used five different lambics, two of which were matured in the same Oloroso cask. These lambics, 75% of the blend, were two years old when they were put in the freshly emptied sherry cask and matured for over a year before being blended. As a result, the weighted average age of this blend at bottling was over 31 months. The Oloroso cask comes from the last bodega of Josefa Perez Rosado, near the church of Santiago in Jerez De La Frontera.
